Homemade Blueberry Muffins
I just LOVE homemade blueberry muffins! Especially with fresh blueberries straight from the garden. I always freeze blueberries each year so I have them on hand for cobbler or pancakes or muffins! This muffin recipe is great for pulling blueberries out of the freezer and popping them right into the batter. No thawing needed.
I will make up a batch of these as thank you gifts for people. They are so easy to make but are always greatly enjoyed! The muffins themselves also freeze well so I can make a big batch on a Sunday and have them available for breakfasts or snacks for the family throughout the week.
My son is 16 months old and he loves his muffins. They are so easy for breakfast with him. Mornings are the best time for me to get any work done so I try to have simple breakfast options that he can feed himself. A muffin and some sliced fruit are a great option. Then he can sit next to me at the kitchen counter eating his breakfast while I do some work such as typing this post about homemade blueberry muffins!! He also really enjoys these strawberry greek yogurt muffins!
1/2 cup Butter (Room Temperature)
1 cup Sugar
1 tsp Vanilla
2 tsp Baking Soda
1/4 tsp Salt
2 cup Flour
1 cup Whole Milk
2 cup Fresh or Frozen Blueberries
1/2 tbsp Sugar
1/8 tsp Nutmeg
Preheat oven to 375 degrees. Beat butter until creamy. Add 1 cup sugar and beat until fluffy. Add eggs one at a time and beat in between. Beat in vanilla, baking powder, and salt. Fold in 1 cup of flour until just incorporated. Next fold in 1/2 cup milk. Repeat with the other cup of flour then half cup of milk. Toss blueberries in 1/2 a tbsp flour then fold into batter.
Place muffin papers into your muffin pan and grease them with pam. Use your dough scoop to fill each paper most of the way full. Combine the 1/2 tbsp sugar and the nutmeg and sprinkle on top of the muffins. Bake for 15-20 minutes (or until a toothpick comes out clean).
